Simply did it with Photoshop. Found a picture of the piranha plant on the internet and sized it up a lot, then pasted it in and made a cut out of the part of the pipe that covers the bottom of the plant and put it on "top" of the plant layer. Also did a black gradient on the plant to give it some shade. The picture I took myself
Very nice 16-bit/reality mix going on here. I don't know why, but this picture really reminds me of the Piranha Jungle level from Yoshi's Story.
If you plan on doing another shot like this (and you should because you're quite talented), take a picture of a plain stretch of highway and photoshop in the Mario Kart 64 characters racing down it.

Hate to put a damper on everyone's mood, but this kind of art is hardly new. For example, this, this, and this are all examples I found under a single guy on dA, and they show considerably more effort than this ten-minute photoshop job. Here is one I made in under 10 minutes.
(It doesn't use the sheer effect, but meh. I think that makes it look too flat.)
