NoLimits 2-As of this post I have 1624 hours on it. I don't think that's entirely accurate since I've also used the non-Steam version, and I've left it open in the BG quite a lot, something you're probably more likely to do with wide open sandboxes. Just one of a few avenues of letting creative juices flow. With my current computer with more modern components, I can feel like downloading more scenery-heavy parks from the workshop.
Portal 2-I can get sucked in if I have an idea in mind for a custom test chamber, but I can also get lazy. 270 hours as of this post, but it's still above average compared to the rest of my library. I feel the puzzle elements can be used for a variety of creative set-ups, but thinking of how tends to push my brain on the edge of my comfort zone.
Pokemon Puzzle Challenge-I like those fast-paced puzzle games that play differently each time
Pokemon Go-well it was, until it finally sunk in that Niantic prioritizes minor text fixes over adding more Johto Pokemon than the ones that hatch from eggs as well as getting colder outside, so I uninstalled it for now to preserve my sanity.
Also pretty much any story-heavy game once I've gotten to the meat of the story and if it has a pile of plot twists and/or one or more characters who are walking spoilers.

To me, probably The Binding of Isaac. Like, I have already completed the original game on PC, I've completed Rebirth on PC, I've bout and completed Rebirth on the 3DS, I've bought and played a good bit of Afterbirth and Afterbirth+ and I already preordered Afterbirth+ for the Switch. I think by now, I've easily gotten around 300 to 500 hours of fun out of this franchise already.

-ANY Open World game. (FO:NV, Skyrim.) Fallout New Vegas is my favorite game of all time. Skyrim has a great story but a broken leveling up and rubberbanding system as well as a bland and boring set of characters but that didn't stop me from putting close to 500 hours into the game. There is just sooo much to do and sometimes it's just nice to go out there and explore.

-Permadeath Roguelikes (Darkest Dungeon, XCOM, FTL.) - Unlimited Replayability with an amazing modding community. FTL has to in be in my top 3 favorite games of all time.

These are definitely the games I've sunk the most hours into.
Uncharted and Ace Attorney. Played the former's trilogy all in a row, and for the latter I can't simply stop playing until I've got a case done for the day.

Tibia and Ragnarok were very addicting back in my school/high school days though.

Super Mario Run. Or at least, it was when I had rally tickets. I could always just say "1 more race and then I'll stop" and play for an hour longer than intended. Not so much the main game though, what with the black coin challenges. It's not as encouraging to try over and over again because there's no guaranteed pay-off like rally

Heroes Might and magic 5. I just love that game, especially because I have mod that add missions from "Heroes 5" and "Hammer of Fate" to "Tribes of the East". It makes me happy to play old missions with new gameplay mechanics.

And now it's become addicting again with the nicer weather, newer walking/running shoes, and the gyms/raid update. Still like to hatch eggs (receiving a 10k egg gives me a ray of hope) but now I'm kinda tired of having only 2 generations, and I've never participated in raids that have a 5-digit amount of CP because I assume I'm alone.
