Pastries with ham and provola cheese
Welcome in a new episode of Cooking Waka!
Today, we're going to prepare some lovely small dinner for 4 people. As the title says, pastries!
This is perfect for when you do one of those huge lunches ala italian's sunday lunch, and are looking for something light to eat as dinner, before going to bed.
So ye, let's see the ingredients (for 4 people):
- Pastry sfoglia, which you can buy somewhere;
- Various ham, in the pic you see turkey ham and raw prociutto ham;
- Provola cheese, just took from zio Peppe's cow farm.
That's all!
Let's now see how to make lovely pastries!
First, you have to make your oven go in heat like this:
I usually put it at 200°C. If you have °F or °K stop here and use another guide.
While the oven goes in heat slowly, cut the provola cheese like this:
I suggest cutting in little pieces and then squishing it in your hand, so that all the excess milk goes away. This is very important, or your pastries will be excessively... wet ;) and trust me that's awful when it happens.
Next! Open one sfoglia like this:
Note that it can be of any shape you like. I like it circular because it's cute.
Now, imagine your pastry sfoglia is cutted in 4 (if it's for 4 people), and then put the content of the pastry in the middle of each piece:
Like this. Watch out to not make it go too much on the borders, or you won't be able to close the pastry easily.
Next, open the other pastry sfoglia, and put it over the one you prepared now, like this:
If you make different fillings, don't forget which piece has what, or it's going to be complicated later, lol. I usually make a little dot on the different filled ones, or a shape, a letter, anything.
Now, take a fork and start killing your pastries:
It's an important step, or your pastries will explode in the oven.
That's it! Put everything in the oven, 200°C:
They generally take 30 mins, but it varies. You have to wait atleast 15 minutes.
While you wait, you could do else, for example, creating your vldc levels.
I always suggest to not make activities that will make you forget you're cooking things though!
Some time passes, let's check the oven:
As you can see, they all got big. From here on, you must watch out that the bottom won't burn.
To help your quest, use this weird shovel:
Use it to see the bottom of your pastries. It should be golden. If it is, then they're almost ready.
In my case, they got gold on the bottom here:
At this point, you should turn them upside down, but that'd ruin them: the upper part is still a bit raw, and doing that would make the filling fall from it!
That's why I suggest you to activate magic field of your oven like this:
This spell will make a magic field appear on top of your pastries, cooking the upper part of them.
I think you call it "grill function". If your oven doesn't have such thing, then trash everything and call a pizza.
Let's make it go for 5 mins. This won't take much due to the grill being a powerful function of the oven:
They look ready! The top is also golden.
Let's pull them out:
TA-DAAA! They're ready!
I suggest to serve when they reach ambience temperature. Don't eat them immediately, or you won't appreciate the flavour of the filling.
Do note that these can be made as sweet pastry as well! It all depends on the filling you want to put inside them!
